Wheat Potato Bread

Mom Jones

Make a sponge of:
 6 cups hot water
6 cups whole wheat flour
1/2 cup gluten flour
Beat 10 minutes

Mix instant potatoes:
1/2 cup instant potatoes
1 cup boiling water
Add to sponge

Add:
 3/4 cup oil
3/4 cup honey
1 T. Sea Salt
2 T. Lecithin
2 T. Dough Enhancer

Mix
Add:
2 T. instant yeast

About 10-12 cups wheat flour

( can use part white if you want)

Knead in mixer for 15 minutes. Let rise until double. (I leave dough in the mixer, but cover and keep in a warm place. Oil 6 one lb loaves and oil the counter. Place dough on oiled counter and divide into 6 equal portions. Flaten with hand into a rectangle and roll into a loaf shape. Place in oiled bread pans and cover. Let rise only to the top of the pan. Bake at 375 degrees for 30 min. As soon as they are done, butter tops and take out of pans. Let cool on cooling rack for 1 hour. (Another hint, never wash your bread pans. This way, your bread will not stick to sides of your pan.) Enjoy and know that you are feeding your family the healthiest food on earth!
