Pizza Dough made Healthy

(from Bosch store)
Mom Jones

In a bread mixer or kitchen aid mix:

2 1/2 cups warm water
3 Tbl honey or sugar
1 Tbl dough enhancer (optional)
1 1/2 cups cooked brown rice ( you can also use any cooked cracked grain) For brown rice to cook use 4 cups water to 2 cups brown rice, bring to a boil and simmer for 45-60 minutes. (I love to eat it for breakfast, too.)
3 cups flour
2 Tbl yeast
Mix well. It will be a little runny. Let it sit and 'sponge' for 10-15 min. Then pulse to release air
Add:
4 Tbl. olive oil
1 cup flour (to separate sponge from salt)
On top of flour add:
2 tsp salt
Mix/Knead. Add flour a little at a time while mixer is kneading until the dough pulls away and cleans the sides and bottom of the mixing bowl. (I didn't count how many cups this was, but it may have been 5-7 cups.)
Knead 10-15 minutes.

Let raise until double

Spread pizza dough in 1 3/4 - 2 lb size balls. ( I did 4 large pan pizza's). Oil the outside of ball and let it relax 5-10 minutes. (Pizza will roll out easier if you don't knead it after it has relaxed)
Oil surface of the counter. Roll out to desired size and thickness. Spread pizza sauce on top. (I also use marinara or spaghetti sauce) Top with desired toppings. Bake at 450-degrees for 12-15 minutes. If you are using a pizza stone, it is only 5-9 min at 500 degrees.

Garlic Chicken Pizza:

saute:
1 T. olive oil
2 T. onions
4 cloves pressed or chopped garlic
1 tsp basil
1 tsp oregano
1/2 tsp. salt
6 ounces chicken breast. Break into bite size pieces as it cookes
Saute until chicken is done then add:
1 cup chopped tomatoes.

Spread dough with either pizza sauce or alfredo sauce and then spread the above chicken mixture over the top. Sprinkle with with 3/4 cup sliced mushrooms, 1 1/2 cups mozzeralla cheese and 2 T. Parmeasan cheese. Bake on a pizza stone for 7 minutes at 500 degrees. ( I baked in a well oiled large jelly roll pan at 450 degrees for about 12-15 minutes.


Apple Dessert Pizza

4 cups sliced apples
2 T. lemon juice
1/2 cup brown sugar
1 1/4 tsp cinnamon
1/4 cup butter
1/2 cup bread crumbs
1 cup grated cheddar cheese
1 cup grated mozzarella cheese

Sprinkle sliced apples with lemon juice. Place apples on a 16" pizza crust and sprinkle with the cinnamon and brown sugar. Cut eh butter into the bread crumbs and sprinkle onto the apples. Top with cheeses. Bake on a pre-heated pizza stone at 500 degrees for 7 minutes. (You could probably bake in a baking pan for 12-15 min at 450 degrees)
